Amaranth Porridge

Ingredients:

  • 1 cup amaranth
  • 3 cups water
  • 1-2 apples, peeled, cored and chopped
  • 1tsp cinnamon
  • 2 tbsp nuts or seeds

In a saucepan, combine amaranth, water, apples, and cinnamon.  Bring to a boil, cover and reduce to low heat.  Simmer 20-25 minutes.  Top with nuts or seeds and serve with milk or milk substitute.
