Amaranth Porridge

- 1 cup amaranth
- 3 cups water
- 1-2 apples, peeled, cored and chopped
- 1tsp cinnamon
- 2 tbsp nuts or seeds
In a saucepan, combine amaranth, water, apples, and cinnamon. Bring to a boil, cover and reduce to low heat. Simmer 20-25 minutes. Top with nuts or seeds and serve with milk or milk substitute.
