Minted Carrots with Pumpkin Seeds

- 3 medium carrots (peeled and cut into round slices)
- 1 Tbsp parsley (chopped)
- 1 Tbsp mint (chopped)
- 2 Tbsp pumpkin seeds (coarsely chopped)
- 1 Tbsp lemon juice
- 1 Tbsp olive oil
- Sea salt and pepper to taste
Steam the carrots until still slightly crunchy. Chop the rest of the ingredients and toss with the carrots.
