Minted Carrots with Pumpkin Seeds

Ingredients:

  • 3 medium carrots (peeled and cut into round slices)
  • 1 Tbsp parsley (chopped)
  • 1 Tbsp mint (chopped)
  • 2 Tbsp pumpkin seeds (coarsely chopped)
  • 1 Tbsp lemon juice
  • 1 Tbsp olive oil
  • Sea salt and pepper to taste

Steam the carrots until still slightly crunchy.  Chop the rest of the ingredients and toss with the carrots.
