Ponzu Sauce

Ingredients:

  • 8 cloves garlic, smashed
  • ½ cup coarsely chopped fresh ginger
  • 3 stalks lemon grass, roughly chopped into 1/2 –inch pieces
  • ½ tsp crushed chilli flakes
  • ½ cup white wine
  • 4 cups filtered water
  • ¾ cup tamari
  • ¾ cup sugar

Combine all ingredients in a pot and bring to a boil, stirring until sugar dissolves.  Reduce heat and simmer for 20 minutes.  Strain, reserving liquid and discarding solids.
