Ponzu Sauce

- 8 cloves garlic, smashed
- ½ cup coarsely chopped fresh ginger
- 3 stalks lemon grass, roughly chopped into 1/2 –inch pieces
- ½ tsp crushed chilli flakes
- ½ cup white wine
- 4 cups filtered water
- ¾ cup tamari
- ¾ cup sugar
Combine all ingredients in a pot and bring to a boil, stirring until sugar dissolves. Reduce heat and simmer for 20 minutes. Strain, reserving liquid and discarding solids.
