Fried Pineapple Rice

Ingredients:

  • 1 small chopped onion
  • 1 tbsp sesame oil
  • 1 tbsp tamari (or Bragg’s)
  • 2-3 cups cooked brown basmati rice
  • ½ – ¾ cup chopped pineapple
  • 1 chopped celery stalk
  • 1 tsp curry
  • ½ tsp turmeric
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 2 tbsp fresh chopped cilantro

In a large saucepan on medium heat, sauté the onions in oil until the onions are translucent.  Add the tamari (or Bragg’s), cooked rice, pineapple, celery, curry, and turmeric.  Mix thoroughly and cook for 6 – 8 minutes or until all ingredients are heated throughout.  Season with salt and pepper and garnish with cilantro.
