Vegetable Curry

Ingredients:

  • 1 cup uncooked brown basmati rice
  • ½ tsp cinnamon
  • 2 cloves minced garlic
  • 1 cup chopped broccoli
  • 1 cup chopped cauliflower
  • 1 large chopped carrot
  • ½ tsp mustard seeds
  • 1 tbsp dark sesame oil
  • 2 tsp curry powder
  • ½ tsp cumin
  • ½ tsp turmeric
  • 3 tbsp shredded coconut

In a medium pot, cook the rice by boiling it with the cinnamon.  In a large saucepan on medium-high heat, sauté the garlic, broccoli, cauliflower, carrots, and mustard seeds in oil for 2 minutes.  Stir in the curry, cumin, turmeric, and coconut.  Reduce heat to low and simmer for 5 – 10 minutes or until vegetables become tender.  Serve over rice.
