Curried Chicken Salad

- 2 ½ lbs boneless, skinless, white meat chicken
- 1 cup red and green apple (unpeeled and diced)
- 2 stalks celery (diced)
- ½ cup mango or papaya juice
- 1 tsp curry powder
- ¼ tsp turmeric
- 1 Tbsp olive oil
- Salt and pepper to taste
Bake chicken at 350 degrees for 20 minutes, then dice. Place cooked, diced chicken in a large salad bowl and cool. Combine with remaining ingredients. Adjust seasoning to taste and refrigerate for an hour before serving.
