Curried Chicken Salad

Ingredients:

  • 2 ½ lbs boneless, skinless, white meat chicken
  • 1 cup red and green apple (unpeeled and diced)
  • 2 stalks celery (diced)
  • ½ cup mango or papaya juice
  • 1 tsp curry powder
  • ¼ tsp turmeric
  • 1 Tbsp olive oil
  • Salt and pepper to taste

Bake chicken at 350 degrees for 20 minutes, then dice.  Place cooked, diced chicken in a large salad bowl and cool.  Combine with remaining ingredients.  Adjust seasoning to taste and refrigerate for an hour before serving.
