Perfect Greens

Ingredients:

  • 1 Tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 large bunch kale (washed, trimmed, and coarsely chopped)
  • ½ cup chopped green onion
  • 1 garlic clove (thinly sliced)
  • ½ cup coarsely chopped walnuts or almonds
  • ¼ tsp sea salt to taste
  • ½ tsp black pepper (or to taste)
  • Lemon wedges (for serving)

Heat the olive oil and balsamic vinegar in large skillet or wok over medium-high heat.  Add the kale, green onion, garlic, and walnuts and sauté until softened.  Season with salt and pepper.  Serve with lemon wedges.
