Guacamole Sandwich

Ingredients:

  • Romaine lettuce or spring mix
  • ½ diced cucumber
  • ½ diced red onion
  • 1.5 tsp chili powder
  • 8 pieces brown rice bread
  • 1 batch guacamole (refer below)
  • 3 cups sunflower sprouts
  • 3 cups grated carrots

Toss the tomato, cucumber, red onion and chili powder together in a small mixing bowl. Spread a thick layer of guacamole on 4 of the slices of the bread. Top with a portion of the tomato mixture, sunflower sprouts and grated carrots. Then top with the other 4 pieces of bread to make 4 sandwiches.
