Bean & Spinach Soup

Ingredients:

  • 2 cups white kidney beans (canned)
  • 1 – 2 cups kidney or red beans (canned)
  • 1 cup garbanzo beans (canned)
  • 2 – 3 cups fresh spinach (washed & drained) or 10-oz frozen chopped spinach
  • 4 cups vegetable broth
  • 2 medium onions (chopped)
  • 1 large clove garlic (minced)
  • 1 tsp dried basil
  • 1 Tbsp dried parsley
  • 1 tsp dried oregano
  • Pepper to taste

Combine all ingredients and simmer about 45 minutes, until onions are soft.
