Bean & Spinach Soup

- 2 cups white kidney beans (canned)
- 1 – 2 cups kidney or red beans (canned)
- 1 cup garbanzo beans (canned)
- 2 – 3 cups fresh spinach (washed & drained) or 10-oz frozen chopped spinach
- 4 cups vegetable broth
- 2 medium onions (chopped)
- 1 large clove garlic (minced)
- 1 tsp dried basil
- 1 Tbsp dried parsley
- 1 tsp dried oregano
- Pepper to taste
Combine all ingredients and simmer about 45 minutes, until onions are soft.
